2 Sticks butter cut up
8ozPitted dates, chopped
1tsBaking soda
5tbSugar
2 Eggs
1 1/4cFlour
1/2tsSalt
1tsVanilla
1 3/4tsBaking powder
1/4cHeavy cream
4ozBrown sugar
1ptHeavy cream chilled

This recipe rage from Australia has just made it to the continental U.S.It soon will be offered in gourmet stores, catalogs, restaurants.Although around for a while, it is the " in " dessert now.

Place dates in saucepan and cover with water. Bring to a boil and reduce to a simmer. Cook for three minutes. add baking soda and set aside. In bowl, cream one stick of butter and eggs, adding eggs one at a time.Fold in flour, salt and 1/2 tsp. vanilla.Slowly stir in baking powder and 1/4 cup of date liquid, until mixture resembles a thick pancake batter. discard remainder of date liquid.Stir in dates.Place mixture in a high sided 9 inch baking pan .( a deep 9 inch round cake pan would be fine )Bake 350 for 30 to 40 minutes or tested done in center. Make sauce by combining remaining stick of butter, 1/4 cup of heavy cream, brown sugar, 1/2 tsp vanilla. Bring to boil, reduce to simmer and cook 3 minutes.Drizzle some sauce over cake as it is cooling. serve rest of sauce separatly. garnish with whipped cream as desired.
